Your consent banner is already doing the hard part
If you've got a consent banner running on your site right now, you're a lot closer to server-side tracking than you probably think.
Not sort of close.

I've been covering privacy-led measurement since 2020 — back when most people were still hoping the cookie situation would sort itself out.
The old server-side setup required spinning up cloud containers, command-line configuration, back-end infrastructure work. Most people opened the setup guide, saw a command line, and closed the tab. That was a completely reasonable response.
That barrier is mostly gone.
